We don't know if Mollie had good reason to or not, maybe the mascots were experimented animals that hate all humans, we will have to wait for another chapter to give any particular reasons tho.

First off, there are plenty of horror games that pacifically don't kill off the mascots and it adds to the horror and scare factor and unless your Poppy Playtime, where you can excellently kill off one of the mascots and it adds to the story and world it didn't work well.
Second off, Mascot death was primarily just played for shock value, added nothing to the story or world. Mascot and the other Mascot have a lot of potential but it's wasted if by each chapter they die for no reason other than just pure shock value.
