More unique means more niche audiences, more niche audiences (smaller) mean lower ratings, lower ratings mean a flop in the eyes of the people signing the paycheck and wanting profits. ππ
The problem with a lot of animated shows nowadays (mostly adult animation, like you mentioned) is that they're made by people who aren't artists or animators. With a lot of adult cartoons, they spawn from a comedian, actor, or whatever isn't an artist who got the idea of "I should make a cartoon, those are really easy to do!"
So they hire a bunch of artists to do all the drawings and there's no clear artistic vision. They're not creator-driven.
The reason so many old cartoons (and some new ones mainly from Cartoon Network and Adult Swim) are good because they're made by animators who have a vision. Even if the shows go wrong, it at least flopped with a good idea.

yeah but those are very few examples in a sea of mediocre adult animation being cranked out. even bojack horseman follows the format pretty well of the stiff, side-view characters. but you're right, in general I do think we're breaking out of the predictable mold, and especially with films like spiderverse encouraging studios to get more experimental with 3d animation I'm hoping we might see a little movement in western animation to get more creative.
