I'm on the same path of enlightenment. I want to know what makes a game GOOD. The best way is look at the highest-rated games. Then, take note yourself of the things you see that they have in common.
-art
-first impression (big one!)
-storyline(interesting to pull you in)
-gameplay(is the simulation of physics real enough)
There are many elements to study, but you have to focus on the genre first. For example, I prefer playing action platform games. These have game elements that are important to me, like variety of enemies throughout the levels, but this wouldn't apply to a game where you are an airplane and you fly around shooting other planes. I don't see much variety, although making different planes with different ammo might be minimally interesting.
Focus on a particular game genre with as much detail as you have, and I will tell you what, in my opinion, would make me want to play it until I passed it (not just play half-way level 1 and then close the window to try another....I find many of these).
